I would like to think of myself as a creative person. I love taking a recipe and recreate the dish in a way I love or make it low carb approved. So to me this comes naturally.
Yesterday we had a great Christmas lunch with friends. We are the only low carbers so I knew we would be faced with non low carb options. This didn’t bother me at all. I made a snack platter only containing low carb snacks – feta, tomatoes, cucumber, chicken wings, mushrooms, peppers, carrots, brie and a cream cheese dip. It was great and everybody enjoyed the snacks.
Being creative is not only limited to food. I grew up where you will get loads of sweets during the holiday season and this must have been one of my favourite memories as a kid. Raising Little M as a low carb kid – sweets are something far and few. I decided to treat all the kids with a creative activity instead. I love my ceramic pens I bought back in 2015. So each kid got a plate and they could decorate the plate as they wished. The adults got a coffee mug – and I think they enjoyed it just as much.
Get creative this holiday season – create new snacks, new traditions, new activities. Whether we like it or not – food is at the center of this season, but there is no rule that says you have to serve high carb food, so get creative and have some fun.
